Seasonal eating is often sold as something mystical. It is simpler than that: what is in season is usually fresher, cheaper, and more varied across the year.

Why variety matters

The gut microbiome responds to the range of plants you eat more than to any single food. Rotating with the seasons does that rotation for you.

  • Buy what is abundant and inexpensive
  • Let the market decide two or three of your vegetables each week
  • Repeat the ones you actually enjoy cooking
